Every year, between February and April, there are snow shoe tracks through the woods and billows of steam rising from the sap house. We use a wood-fired evaporator to boil all of our syrup. We harvest all the wood from our own property, thinning to let more light in for maple trees.
Please note that the international syrup grades have changed and what used to be Grade B is now called Grade A Dark Color or Grade A Very Dark Color.
Our syrup is sealed in plastic New Hampshire Maple Producers jugs. The outside looks like syrup you'd buy anywhere, but what's inside only comes from Kearsarge Gore Farm.
